Traditional Pork Sausages

Ingredients

1 x 400g pack fresh standard pork sausages of your choice
2 teaspoons oil
500g potatoes, unpeeled and cut into small cubes
1 onion, peeled and finely sliced
2 red peppers, deseeded and finely sliced
1 teaspoon garlic purée or paste
150ml apple juice or cider
150ml hot vegetable or chicken stock
1 teaspoon dried mixed herbs
100g green cabbage or kale, roughly chopped
1 x 170g can sweetcorn in water, drained or 175g frozen sweetcorn

Method

1. Heat the oil in a large non-stick pan over moderate heat and cook the sausages and potatoes for 3-4 minutes or until brown all over. Transfer to a plate and set aside.
2. In the same pan add the onion, peppers and garlic purée or paste. Cook for 2-3 minutes until soft but not coloured.
3. Return the sausages and potatoes to the pan and add the apple juice or cider, stock and herbs. Season, reduce the heat, cover and cook for 15 minutes. Add a little more stock, if required.
4. Add the cabbage or kale and sweetcorn. Cook uncovered for a further 2-3 minutes.
5. Divide between four shallow bowls and serve.
