Lean tender loin of pork with trimmed bones and lovely crackling. A great joint for all occasions.

Rub salt generously on the skin, making sure to get in all the scored bits and roast on 180oc for at least 1.5 hours in a fan assisted oven. Make sure the internal temperature reaches at least 75oc.
